My Knight is about ready to hit T3. Up to this point I have been playing him as a 2H instead of S&B. I am beginning to think he might offer more to a group as a S&B. Anyone have any tips or know some good playstyle guids for Knights?

well in essence tanking basics comes down to whether you want to tank PVE or PVP. For PVP you want toughness. For PVE you want strength. For a Knight mainly its all about the auras you use. You can have at max 3 auras on at a time. Theres actually a mod you can download at curse.com that enables you to queue up the auras you want in a set of three. I personally dont use the mod, but I know people that do and say its great. give it a shot and remember dont ever stop twisting those auras.
Also, your choice could depend on your roll in a group/wb and the make up of your party. On a recent raid Bulz asked me to switch to S&B from 2H because I was the 2nd tank against a very tough boss. So I carry both and use 2H for damage output and S&B to stay up longer. I tried a twisting mod from curse but could not get it to work so I disabled it. I remapped my q,w,e, and r keys to be hot keys so 1,2,3.....are attacks and q,w,e, and r are aura keys. It makes it easier but I still don't twist enough. I should revisit the mod option, either figure out what I was doing wrong or find a different mod
Leath you should definitely talk to Cael at some point, he got the mod to work. He said it makes Twisting very easy. Also in order to be a good tank as a Kotbs its very important to look at the buffs you can give your party. I believe theres one skill in the middle tree that gives an incredible +10% crit to your party members. Things like this can improve your party significantly. Kotbs is really a class where you have to think about other people in group as opposed to a solo spec like a IB and such.
Being I have 3 Knights,my favorite class, two of my 3 have been 2 handed swords and my newest will be specked as a sword and board. I personally prefer two handed as it does more damage, however it I am finding that it is not always the best route. As Leath said it depends on your role in the raid. my advice is to try each way and see what you like best.
