I was raving about how good my friends macaroni sald was week before last in Raidcall and someone said that sounded awesome. Well here is the recipe based on what she had on hand and decided to try mixing together.
1 pound of cooked macaroni
1/3 pint of quartered cherry tomatoes -- can use more or less. I used what I had
4 scallions, sliced
4 ounces of shredded cheese -- I used a 6 cheese blend (provolone, asiago, romano, mozzarella etc)
salt & pepper to taste
I added:
1 can of black beans, rinsed
1 can of southwest corn (with red & green peppers) rinsed (can go with thawed frozen corn and fresh peppers if you have them, peppers should be diced)
1/4 avocado, sliced
1 small can of sliced olives
Dressing: blend in the blender
1/3 cup mayonnaise
2 tablespoon of rice vinegar (recipe called for red wine vinegar which i didn't have)
then I added approximately: (do it to your taste)
1 tsp curry
1/2 tsp cumin
1/2 tsp tumeric (gives it the great yellow color)
ground sea salt
ground pepper
As you can see she did change things up a little but listed what the actual recipe used. Her changes weren't bad in the dressing and the seasonings great. I love avocado so I would have put more in actually. Too bad I'm switching my diet into the Wahl's Protocol. Need find decent gluten free macaroni to do this and really am not supposed to eat cheese on this diet either.
